  • 1.5-liter milk (full cream)
  • ¼ cup cream (optional)
  • ¼ cup sugar (according to taste)
  • 20 pistachioschopped
  • 2 tbsp saffron milk
  • ½ tsp cardamom powder

Method

This simple dessert is easy to prepare and turns out to be a tasty dish for you and your family to enjoy.

Take a thick bottomed pan and put the full cream milk and get it to a boil. Add cream to the boiling milk and stir it. Let it simmer for 30 minutes and keep stirring in between.

Now add sugar according to how sweet you like it and mix it well. Simmer till the milk thickens completely. Add the chopped pistachios, cardamom powder and saffron milk, mix and simmer for 5 minutes.

Leave the final mix to cool at least for an hour.  After it is cooled completely, you can transfer them to kulfi molds or even plastic glasses. Cover the glass with foil or cling wrap. Insert a stick in the cup. Freeze it for 4-5 hours.
You can dip the glass in warm water or slowly warm up by rubbing between your hands. Gently, remove the kulfi from the glass and garnish with chopped pistachios.

  • 3 saffron (Kesar) strands (optional)

  • 1 tablespoon almond slivers

Method

Gently heat the purified butter in the pan, add the vermicelli and sauté it on a slow flame till it is light pink in color.

Add a cup of water and a one-fourth cup of milk in your sauteed vermicelli. Cook on medium flame, while stirring continuously.

Add the sugar and the rest of the milk into the pan and cook it on medium flame. Don’t forget to stir!

Lastly, add the cardamom powder, mix well, and cook for around 1-2 minutes. Serve with the almond slivers garnishing.

  •  16-ounce kataifi (shredded phyllo dough)
  • 15-ounce ricotta cheese
  • 1 cup shredded mozzarella cheese
  • One-third cup of white sugar
  • 12 ounces of unsalted butter

For the syrup:

  • 1 cup white sugar
  • Half a cup of water
  • One teaspoon lemon juice
  • 1 teaspoon rose water.

Method

Preheat your oven to 400 degrees F (200 degrees C).

Finely chop the shredded phyllo dough. Pour the dough into a large mixing bowl. In a separate bowl, mix together the ricotta, mozzarella, and 1/3 cup sugar.

Put the butter in a bowl and heat it until it is completely melted. Let it sit until a thick white foam comes on top. Use a spoon to skim off the foam to clarify the butter.

Pour the butter into the bowl of chopped dough. Mix the butter and dough together thoroughly. Spread the buttered dough into a 9×13-inch pan. Press the dough firmly into the bottom and edges. Spread the cheese mixture onto the dough, avoiding the edges.

Bake it in the preheated oven for about 30 to 35 minutes. The cheese will turn slightly brown and bubbly.

While the kanafa is in the oven, let’s get the syrup ready.

Take water and half a cup of sugar in a small saucepan. Bring the mixture to a boil over medium to high flame. Reduce the heat to medium and add in the lemon juice, stir well.

Stir the mixture until the sugar is dissolved and the mixture is thickened. Don’t let the mixture caramelize. Now remove from heat and add the rosewater. Set aside to cool.

Remove the kanafa from the oven. Place a large platter or baking sheet over the baking dish. Invert the baking dish onto the platter, the phyllo is on top. Pour the syrup over the kanafa. Cut into as many pieces and serve while hot.
