Kanafa is a Palestinian dessert or a Middle Eastern sweet cheese pastry. This Iftar dessert is simply the yummiest! A crunchy shredded dough with creamy cheese and smeared in rosewater syrup. The kanafa dye turns the dough into its signature orange or reddish color.
- 16 ounce kataifi (shredded phyllo dough)
- 15 ounce ricotta cheese
- 1 cup shredded mozzarella cheese
- One-third cup of white sugar
- 12 ounces of unsalted butter
For the syrup:
- 1 cup white sugar
- Half a cup of water
- One teaspoon lemon juice
- 1 teaspoon rose water.
Preheat your oven to 400 degrees F (200 degrees C).
Finely chop the shredded phyllo dough. Pour the dough into a large mixing bowl. In a separate bowl, mix together the ricotta, mozzarella, and 1/3 cup sugar.
Put the butter in a bowl and heat it until it is completely melted. Let it sit until a thick white foam comes on top. Use a spoon to skim off the foam to clarify the butter.
Pour the butter into the bowl of chopped dough. Mix the butter and dough together thoroughly. Spread the buttered dough into a 9×13-inch pan. Press the dough firmly into the bottom and edges. Spread the cheese mixture onto the dough, avoiding the edges.
Bake it in the preheated oven for about 30 to 35 minutes. The cheese will turn slightly brown and bubbly.

Take water and half a cup of sugar in a small saucepan. Bring the mixture to a boil over medium to high flame. Reduce the heat to medium and add in the lemon juice, stir well.
